1/2 cup panko/smashed ritz crackers if you don’t have panko
2 teaspoons of cracked black pepper
4 tbsps of melted butter
Combine the egg, mayonnaise, dijon mustard, old bay, pepper, and lemon juice in a large bowl and mix well. Add the crab meat (be sure to check the meat for any hard and sharp cartilage) and panko; gently fold mixture together until just combined, being careful not to shred the crab meat.
Shape into 8 crab cakes (about 1/2 cup each) and place on prepared baking sheet. Pour melted butter on top of crabcakes.
Preheat oven to 425ºF and broil crab cakes until golden brown, about 25-30 minutes.
